Hawaiian Pork Chops

Yesterday was one of those days I was trying to figure out what to cook without going to the grocery store. It has been about 2 weeks since I have restocked our food supplies. It was rainy and just a blah day. My husband was tired from helping family the day before and really didn’t want to do anything. I was catching up on house chores and laundry…you know the stuff that is like the lamb chops song from way back when…it’s the stuff that never ends.

Luckily a week before my husband bought a large pork loin and cut it into different size pork chops. I pulled those out and started looking in the pantry. I had some pineapple juice. Anytime I see pineapple juice or pineapples I automatically think something Hawaiian, so I decided to make a Hawaiian pork chop marinade.

This is a very easy and quick meal that is perfect for school nights. It took 5 minutes to prep and 8-10 minutes to cook. Try them and see what you think.

Hawaiian Pork Chops

Prep Time: 5 minutes

Cook Time: 8-10 minutes

Ingredients

  • 6 – 8 thin sliced pork chops
  • 1/2 cup pineapple juice
  • 1 1/2 tablespoons minced garlic
  • 3 tablespoons honey mustard
  • 2 tablespoons minced ginger
  • 3 tablespoons soy sauce
  • 3 tablespoons light brown sugar
  • Black pepper to taste

Instructions

1. Wash off pork chops and pat dry.

2. Poke holes all over the pork chops with a fork or knife. This will help the marinade to soak in throughout the chops.

3. Place all of the pork chops in a gallon size zip lock bag.

4. Add the next 7 ingredients to a bowl and whisk or stir together.

5. Pour the marinade into the bag with the pork chops. Seal and squish around or shake until all pork chops are coated.

6. Lay the pork chops flat in the refrigerator for at least 4-6 hours or overnight. Flip the pork chops at least once.

7. Grill or sear in pan on stovetop. Sprinkle with fresh parsley flakes and serve.

I personally prefer these pork chops grilled. I used my handy indoor Ninja grill which is perfect when it’s too hot outside or if you live in an apartment. I have the Ninja Foodi 5 in 1 Grill and I literally use it all the time. It is fast and it can grill from frozen if you already have pre-marinated meat.

These pork chops had a great flavor. The flavor was not overpowering but light and delicious. My husband and son thought they were great without anything else on them. My daughter said they were good, but she likes to put condiments on EVERYTHING right now, of course she asked for barbecue sauce. My husband talked her into eating them without it though. So in my eyes it was a win-win and there were no leftovers.

Today one year ago is a day I will never forget. It was a day my husband and I waited for and waited for. Prior to that day we had tried for 12 years to have a child. There were so many ups and downs and emotional setbacks that went along with this. Here is part of our story.

My husband and I went through several tests and visits with a fertility specialist. When we received some of the results the fertility specialist told us if we were planning to have a child we needed to do it now. We were told we would probably have the best outcome with IVF.

The doctor talked about the IVF process. He mentioned they would probably need to implant at least 4 embryos in order for at least one to stick and develop. Then he mentioned the chance of twins or multiples. My palms started to sweat. I started rocking back and forth in the chair and of course I had all types of thoughts racing through my mind. I was not comfortable with the thought of more than one child at a time. My husband actually laughs at me because my motto was (keyword was) “one and done.” The funny part is we were fostering three children at one time for a little bit.

The doctor mentioned the hormone meds I would have to take and discussed the side effects of those. After the doctor’s visit my husband and I went home to decompress and process all the information. Prior to the last tests we took my doctor had me on metformin to help me ovulate. I tell you now that drug, to this day, I will call the devil drug. That medicine had me sick to stomach daily. They also had me on another medication (Clomid). I could only take Clomid for three months. Let’s just say I took it for two months and my husband begged me not to take it for the third month. I told my husband I didn’t feel like myself while I was on it, so we agreed for me not to take the third month.

After decompressing all the information, thinking long and hard about what our next plan of action was going to be and praying about it we decided that IFV was not for us. We started looking into private adoption. I researched, sent emails, and we eventually had a consultation with one of the best adoption attorneys in the state. We completed all of the paperwork, did the home study, started raising funds and saving like crazy, and started the waiting process.

During the time we were waiting on the private adoption list we went to an informational session in our town on foster care and adoption. During this session there were speakers that talked about their experience with foster care and talked about some of the children they fostered and some later adopted. While the speakers were talking there was a feeling that I honestly cannot describe. It was more like a calling. I felt something so deeply that I knew I had to talk to my husband about it.

Over the next couple of weeks we talked about foster care vs. private adoption and what we were both feeling at the time. Before that informational session I was completely against fostering. I mean how can you get attached to a child and then have the child leave your house to go back to their family. That is the purpose of fostering…reunification. That was actually my fear. I was afraid of loving these children so much and getting so attached that when the time came for them to leave it would be so heart wrenching. I have to say it was heart wrenching. Fostering is not for the weak of heart. I promise you will grow with your foster children if you journey into foster care.

We decided to follow what I felt was God’s plan for our future family. I’m just going to go on record and say that sometimes having faith and trusting God’s plan is not always easy. Believe me when I say you will be tested, but God provides what is necessary when you follow his plan and I promise you will grow from the experiences.

When we started the foster to adopt process we were excited, but nervous all at the same time. Our home received a license and within two weeks we had our first placement. We would have two more placements before our son and daughter would be placed with us. I will never tell you why our children were placed with us that is their story to tell, not mine, but one thing I do know is God’s timing is the right timing. We had these two sweet and completely opposite children for almost three years before we finally received an adoption date.

In that period of time we have been through a couple of counselors, battles with the school for additional help due to learning disabilities, numerous behavioral issues, ups and downs around visitation and talking through their experiences. However, through all of the tears and heartaches we have created so many sweet and wonderful memories with these two beautiful children.

Our daughter will start laughing for absolutely no reason. My son will make jokes and do some silly stuff just to make people laugh. Then in those sweet tender moments when they know my day hasn’t been so great they reciprocate what I have shown them. They give me a big hug and tell me they love me. My son will take my hand or arm and start lightly rubbing it and then whispers that he loves me. Even when we get into disagreements my son will come to me afterwards and say “Mom I know you yelled at me and I’m sorry for what I did, but I know you still love me.” I have also shown our son and daughter how my husband and I “secretly” tell each other how much we love the other. Try this with your husband or children. If you are holding their hand squeeze the other person’s hand 3 times for I love you, 4 times for I love you more, and 5 times for I love you big much. My son likes this sign of affection.

This day 1 year ago my husband, step-son, and I along with our two foster children and our support group were sitting in the court house for an adoption hearing. It was finally my foster babies adoption day! I cannot describe to you the feelings I had on that day. It all seemed surreal and I honestly could not believe it was finally happening. It was a day of tears of joy, laughter, and excitement. September 13th will always be a special day in our house. It’s the day God blessed us legally with our now son and daughter.

If you ask me what I am doing today I will tell you celebrating my babies and thanking God for my blessings. We had dinner at one of our favorite restaurants. We had a movie night and friends and family posted on Facebook how much they love our kids. After dinner I read these messages to the kids and showed them the pictures and videos.

To my kids Happy Gotcha Day! We will continue to celebrate everyday, but especially on 9/13 and as my son said this afternoon….I got you!

Does a Person Lie Just to Lie

What personality trait in people raises a red flag with you?

Does a person lie just to lie? What do lies really mean? Is the person scared? Is the person just trying to get what she wants? Was she subjected to lies when she was little? Does she have a disorder?

When asked what personality trait in people raises a red flag with me my mind immediately goes to lying. I believe it is the fact that I am currently dealing with this in my life with other people. I decided to sit back and really think about this personality trait, why this trait bothers me so much, and why people lie.

I know I’m not the only person out there who has been lied to. When I’m lied to there’s an automatic lack of trust. Every time that person tells me something going forward I’m always going to second guess them. Lying also creates a sense of disloyalty. If a person lies to me about one thing what else are they going to lie to me about. Don’t get me wrong I’m sure everyone has told a lie even if it’s that little white lie. I know we all try not to lie, but honestly I think some people get caught up in the moment and sometimes it slips out. You might have lied and not even realized you did until later. If you’ve never lied then I want to shake your hand.

Now the big question…why do people lie? I know from experience with people I know that they may lie because of their past. She might have been raised in a family where lying was acceptable. Maybe she witnessed one parent lying to another parent multiple times. This is why parents need to be extremely careful what they subject their kids to.

Others may lie to get out of “trouble.” I find this reason and the one above to be the main reasons that children lie. Children the majority of the time lie out of fear. This may also be true for men or women who feel their life is endangered.

Let’s think about this. As a child you saw your mother verbally abuse your siblings and you saw your father physically abuse your mother. Your Dad was about to catch you in a lie, but you hurried to tell another lie because your Dad was about to tear your butt up as we say in the south. You experience many more instances similar to this. At this point lies are a part of your daily survival or maybe the daily survival of another family member.

Listen, I know this may be an extreme situation, but is it really? Think about it and let it sink in. When you were younger did you experience situations like this or did you know someone who experienced similar situations, but maybe not as extreme. If everyone of us experienced this or knew someone who did, then maybe this is not as an extreme of a scenario as we may think.

People who suffer from certain disorders may be prone to lie. Disorders such as personality disorders and as mentioned above situations that may have caused PTSD may lead a person to lie more often than not.

Now I’m not saying to take every lie as a grain of salt, because there are some people that lie to impress or lie to manipulate others. I’m also not saying that if a person lies to you over and over again that it’s okay, because it’s not. It’s also not okay for someone to constantly bring negativity into your life.

If a person has a disorder recognize it. Do not dismiss it. If you feel you can help that person, then help. If you feel the person needs more help than you can provide point that person in the right direction.

If lying is a personality trait that throws up a red flag for you, then recognize it and be more conscious about the steps and actions that you take towards that person and the situation. The next time you catch a person lying to you sit back and ask yourself why this person is lying to you. Is the person suffering from a disorder? Is something else going on with the person where maybe more attention and additional questions are needed. Is this person in danger?

Help where you can and show some grace where and when it is needed. Not everyone lies just to lie. Try to be the best version of you and try to help someone else be a better version of themselves.

Getting to Germany

Where is the farthest you have traveled from home? When I am asked this question I immediately say Germany! My husband and I went there about 5 or 6 years ago for his cousin’s wedding. I have to say it was the best 2 weeks ever! I highly recommend going to Germany. Definitely add it to your bucket list!

This two weeks was quite the experience. It was the first time I ever traveled outside of the United States. To start this experience off we went to the Charlotte International Airport to catch the direct flight to Germany. As we were going through the TSA line there was a TSA officer with a drug dog walking the line. The dog kept hanging around me looking up at me. I looked at my husband asking why the dog kept hanging around. Of course I’m freaking out at this time because I know I don’t have anything for this dog to stay around me. My husband thinking he was being funny said he probably just smells our dogs but if he sits down you’re screwed! You know all those shows of locked up abroad start flashing through your mind even though I wasn’t abroad at the time. So of course I’m starting to sweat now.

I finally get past the dog and go through the body scanner. Of course, you guessed it I had to get patted down. We finally get in the plane and we are off. It’s a long flight so I try to get some sleep, well, I tried but the person behind me kept putting their foot up on the side of the plane where my arm rest was. Really?!

We finally make it to Germany and I meet my husband’s family for the first time after being married for 7 or 8 years. It was definitely a culture shock. For starters, I do not speak any German. So I’m constantly asking my husband what people are saying. After a few days I start catching on to some of the conversations. By the end of the 2nd week my mother-in-law and aunt were quizzing me on German words. I remember being so nervous while we were out in the towns if I had to communicate with anyone. Truth be told a lot of people there speak English unless you go into the old towns.

We visited in the summer months and there is no air conditioning. If you ask for ice for your water or soft drink you get a few cubes in a very small glass. As much as I love Germany I think my husband and I both agreed to not visit in August again. On the flip side, there is so much fresh, delicious food and the sites and views are AMAZING! You walk down the streets in the mornings and you can smell the bakeries and you see the lines at the bakery. Also, the Aldi’s in the States have nothing on the Aldi’s in Germany. There are so many things that are different that it’s too many to list in one post, so I may have to do a couple posts on Germany.

My husband and I spent two full weeks which was not nearly enough time to visit all the places we wanted. During the two weeks we saw some AMAZING places. Amoung those places were the castle at Heidelberg, so many churches (too many to mention), Mannheim, Munich, and my absolute favorite was Garmisch-Partenkirchen.

Garmish-Partenkirchen is near Zugspitze which is Germany’s highest point. Pictures do not do this place any justice. When you are there in person the views are stunning! It’s truly a once in a life time opportunity. It was 90 something degrees Fahrenheit where we were staying but at the highest point it felt so good and there was actually snow in some areas. After looking at the pictures tell me how you can not just sit on the deck and enjoy the view.

My second favorite was a cruise down the Rhine river. I highly recommend doing this if you ever go to Germany. The cruise stops at each little town along the Rhine. You are able to get on and off the cruise at these towns. While cruising down the Rhine you see the little towns, castles, vineyards, and cliffs. The cruise is very relaxing and lasts 3 or 4 hours.

My third favorite was the castle at Heidelberg. Again, pictures do not do this castle justice. It is another breathtaking view! This was actually one of the first sights we saw and I have to say walking up to this massive castle made my mouth drop. There is a museum inside the castle you can tour, but seeing the castle itself and the views from this castle is one I will never forget.

Germany is a spectacular place to visit. I encourage you if you ever have the opportunity just go you will not regret it. My trip that started out not as I intended ended up being one of my best trips ever! Put it on your bucket list. Go for your honeymoon, anniversary, girls trip, family vacation…whatever it is just go. There is so much to see and do. My husband will go back. I mean we still have to see the Cinderella castle, go to the Black Forrest, and many other sites to venture to.

An Ideal Home

What does your ideal home look like?

If you had asked me about 7-10 years ago what my ideal home looks like I would have told you it’s a one story farmhouse with a wrap around porch on at least 10 acres of land. My kitchen would have navy blue lower cabinets with white uppers with frosted glass. I would have a nice size island with waterfall granite countertops. I would have double ovens, a large refrigerator/freezer, and a walk-in pantry. I would have a separate dining room for all my family and friends to gather. I would have large windows to let in a lot of natural light.

Outside I would have a wonderful garden of herbs and veggies along with fruit trees and blueberry bushes. Of course I can not forget about my farm animals…chickens, rabbits, cows, and a horse or two. And I must have my milking cow Bessie! I mean this is my ideal farmhouse. All of this sounds amazing, right?!

If you had asked me about 5-7 years ago what my ideal home would look like I would have said it’s the home that my child is in. I was at a different stage in my life 5-7 years ago. My husband and I had gone through upset and disappointment after upset and disappointment. We had tried to have kids and well it just didn’t happen. So we set out on a different journey…adoption. Our journey of adoption lead us to our journey of fostering.

Today if you ask me what my ideal home is I will tell you it is the home where my family lives. Sure it doesn’t have all the bells and whistles and sure it’s not large and extravagant and I mean it’s not even a farmhouse for crying out loud! But this house, this is the house where memories were and are being made.

I am the 4th generation owner of this house. My husband and I have made several changes to the house and we continue to update and change things. One thing will never change though. This is the house we have made into a home. This is the house we accepted our first foster child in and the other 4 that would later come. This is the house we have laughed, loved, and cried in. This is the house we let strangers come in and basically tell us how we can run our house while we were fostering. We have gone through so many ups and downs in this house, but all of that has made this house our home.

This is also the home we have welcomed our adoptive son and daughter in with arms wide open. If you were to ask my kids what their ideal home would be they would probably tell you a big house filled with lots of toys and animals. They would also say a place where I am loved and cared for.

When you think of your ideal home instead of thinking about the materialistic things think about the love that is in your home or the love you can provide in your home. Think about your security and safety. Think about the place you know you can always go back to. Not all children or even all adults have this kind of home. There are so many people that go home to a house filled with violence and hurt. They may go home to a house that isn’t clean and comfortable. They may go home to a house with no food or to a house with parents who put other things above their kids. Some people may go home to an empty house.

I challenge you to build your ideal home out of love and memories and create a sense of belonging for all family members in your family. Make your home a safe place and a place your family can go to in time of need.

You have the power to build your ideal home inside and out with love, character, and of course materials.

Stuffed Peppers

My aunt came to visit this week and I asked her one afternoon what she wanted for dinner.  I gave her the option of cube steak or stuffed peppers.  She immediately said stuffed peppers and mentioned she had not had those in a while.  I was perfectly okay with this choice.  I love making stuffed peppers because they are pretty forgiving as long as the peppers are cooked.

I substitute so many things when I make peppers.  It basically boils down to whatever I have on hand as to what they get stuffed with.  I’ve made a vegetarian stuffed pepper for a meatless Monday.  I substitute different meats, but I have to say mixing the hamburger with onion sausage is on point.  If I have carrots in the refrigerator I will usually dice one up and sauté it with the onions and garlic.  I’ve also used quinoa in place of rice for a healthier choice.  If I do not have fresh tomatoes on hand, I’ll use canned tomatoes (drained).  There are so many options with this recipe, so try it and then have fun experimenting with your own flavorful creations.

Stuffed Peppers

Makes 8 peppers

Ingredients:

8 Bell Peppers

1 Tbsp Olive Oil

1 Onion (diced)

4 Garlic Cloves (minced)

2 ½ Tbsp Worcestershire Sauce

1 Tsp Onion Powder

1 Tsp Garlic Powder

½ Cup Beef Broth

½ Tsp Paprika

1 LB Ground Hamburger Meat

1 LB Ground Onion Sausage

(You can use 2 LB Ground Hamburger Meat instead of Onion Sausage)

2 Tomatoes (diced)

3 Squirts Heinz 57 Sauce

1 Tsp Black Pepper

½ Tsp Salt

Small Handful of Pickled Jalapeños (diced)

1 Cup Cheese

2 Cups Water

Ingredients for Rice:

1 Cup Rice

2 Cups Water

1 Tbsp Butter

Directions:

Preheat oven to 400 degrees Fahrenheit.

In a pan add olive oil and heat over low to medium heat.  Add onions and garlic.  Sprinkle with salt & pepper. Sauté until the onions are translucent.  Cook low & slow so they cook evenly & do not burn.  Transfer to another bowl.

Sauteed Onions

Add hamburger meat and onion sausage to the same pan.  Sprinkle with salt & pepper.  Brown meat & drain excess fat (unless cooking with a lean meat like turkey or deer meat).  Hey I already said I was country, so yes, I do cook with deer meat.  If you are mixing the meat with onion sausage I would not add salt.

Combine the meat & sautéed onions.  Add Worcestershire sauce, onion powder, garlic powder, paprika, beef broth, tomatoes, Heinz 57 sauce, and pickled jalapeños.  (The jalapeños do not add a lot of heat.  I would start out with a small amount at first if you are unsure about the jalapeños, but they do add a little more flavor to this dish.) Combine & heat on low heat.Stuffed Pepper Mixture

Cook rice according to package instructions.

Add cooked rice to the meat mixture.  Add 1 tsp pepper & ½ tsp salt.  Add 1 cup of cheese (I used Colby and Monterrey Jack).

Prepare bell peppers by cutting the tops off, cleaning out the flesh and seeds on the inside and washing the peppers.  Stuff the peppers with the rice mixture as shown below and place in a 9 inch x 12 inch baking dish.

Stuffed Peppers

Add 2 cups of water to bottom of dish and cover with aluminum foil.

Place in oven and bake for 45 minutes – 1 hour until peppers are tender.  Then, remove from oven and remove aluminum foil.  Sprinkle the tops with cheese and place back in the oven for about 4-5 minutes until cheese is melted.

Stuffed Peppers

*NOTE* If you have leftover mixture, you can freeze it or you can eat it as is.

Baked Apple Turnovers

In keeping with my apple theme here is a fresh new recipe right out of the oven.  Enjoy!

To start you will need to make the Easy Pie Crust.  Click the link for the recipe.  When I made the crust for the apple turnovers, I sprinkled a little cinnamon and sugar into the flour before I started cutting the shortening into the flour.  Try it!  I promise it is delicious!

Chill the pie crust for 30 minutes.

Pie Filling

Ingredients:

3 Large Apples (Jonagold)

15 Tbsp Apple Juice

½ Cup Sugar

1 Tbsp Cinnamon

¼ Tsp Nutmeg

½ Tsp Lemon Juice

Directions:

Preheat oven to 400 degrees Fahrenheit.

Peel, core, and dice apples.

Add apple juice to pot.  Add apples, lemon juice, and vanilla.

Cook on low to medium heat until apples are tender & break apart when stirred, about 15-20 minutes.  Mash the apples when done.  I leave some chunks.

Mix together sugar, cinnamon, and nutmeg in a separate bowl.  Mix well.

Add sugar mixture to apple mixture.  Stir and cook until a gooey mixture forms.IMG_3172

Set to side to cool.

Roll dough on floured surface to 1/8 inch thickness.  With a large cookie cutter or a container cut the dough into circles.  I don’t have a large cutter cookie, but the Tupperware container I used was between 4-5 inches in diameter.  The Tupperware did the job and did it well!

Fill each pastry circle with 1 tablespoon apple filling.  Wet the edges of the pastry with water.  Fold over and pinch the sides together with a fork around the edges.

Place on cookie sheet and I suggest greasing the cookie sheet.  Brush the apple turnovers with an egg wash.

Bake for 30-40 minutes until tops are a golden brown and bottoms are lightly browned.

Sprinkle with a little cinnamon and sugar.  Let cool 10 – 15 minutes.

If you prefer a glaze instead of sprinkling with cinnamon and sugar, you can prepare the glaze below while the turnovers are cooling.

Apple Turnover Glaze

Ingredients:

1 Tbsp Butter

¼ Cup Milk

1 Tbsp Vanilla Extract

1 Cup Confectioner Sugar

Directions:

Melt butter over low to medium heat.  Add milk and vanilla extract.  Stir in sugar until glaze thickens just a little.   Drizzle the glaze over the apple turnovers.

If you glaze the turnovers they are perfect by themselves.  If you sprinkle them with cinnamon and sugar, you can serve them with ice cream.

As we say in the south this will make you want to slap yo’ mama it’s so good!

Cast Iron Skillet Apple Pie

In my prior posts I mentioned a day trip that my husband and I took to the mountains of North Carolina and then to Apple Country in Hendersonville, North Carolina.  For the past two weeks I’ve been using apples upon apples.  Check out my prior post which includes a recipe for apple butter.

What is your favorite dessert?  If anyone ever asks me, my answer is always the same…warm apple pie with vanilla ice cream on top.  Since I have so many apples I decided to make a homemade apple pie.  Talk about delicious!  This recipe is a light apple pie recipe that is not very sweet.  It is a must to serve it warm with vanilla ice cream.

With any apple pie you have to have a crust, right?  This is the easiest pie crust recipe ever!

Easy Pie Crust

Ingredients:

2 2/3 Cup Self-Rising Flour

1 cup Shortening

10 Tbsp Ice Cold Water

Directions:

Measure the flour into a bowl.  Measure the shortening into the bowl and cut it into the flour until it looks like pieces of cookie crumble.

Apple Pie-Flour

Next add about 5 tablespoons of the ice cold water.  Make sure it is ice cold.  Toss the mixture around with a fork.   The mixture will start to resemble dough.  Add a few more tablespoons of the ice cold water and continue to mix with a fork until the mixture pulls away from the side of the bowl.  Your dough for the pie crust is done!  See..super easy!

I like to split the dough into two equal balls.  I flatten the balls just a little and wrap it in saran wrap and stick in the fridge while I prepare the apples.  When the dough is chilled it’s much easier to work with when you go to roll it out especially if your kitchen is a little warm like mine usually is.

Skillet Apple Pie

Ingredients:

5 Apples (peeled, cored, and sliced)

½ Cup Sugar

1 ½ Tsp Cinnamon

Dash of Nutmeg

2 Tsp Lemon Juice

3 Tbsp Butter

1 Egg

Directions:

Preheat oven to 350 degrees.

After you peel, core, and slice your apples.  Again I used a mixture of Jonagold (2) and Gold Delicious (3).  Place the apples in cold water with lemon juice and a little salt.  This will stop them from browning while you are working with the dough and mixing the other ingredients.  To make this process quick and easy use this nifty gadget. If you use this gadget all you have to do is cut a slit down the side of the apple to have your individual slices instead of ringlets.  Click on the picture for more details.

In a small bowl add the sugar, cinnamon, and nutmeg.  Mix together until ingredients are incorporated well. Set to the side.

Next grease your cast iron skillet very well with shortening so the pie crust does not stick to it.  You will need to grease the bottom and the sides.

Now, you will want to roll your dough out on a floured surface.  Roll it into the shape of a circle the size of the cast iron pan.  I used a larger skillet so I had to roll the dough a little thinner which was great.  I don’t like a lot of dough, but you need it thick enough to hold the ingredients when you cut a slice to take out the pan.  Place the dough into the pan and mash it lightly around the bottom edges, then fit the dough around the sides of the pan.  You can cut the excess dough from around the edges.

Sprinkle some of the sugar mixture over the top of the bottom pie crust.

Layer your apples.  You can sprinkle more of the sugar mixture over each couple of layers.  Add the lemon juice around the apple layers.  Cube the butter and scatter the cubes over the top apple layer.  Sprinkle a little more of the sugar mixture on the top layer of the apples.

Roll the dough out on a floured surface for the top crust of the pie.  You can roll it into a circle, place on the top of the pie, cut the excess from around the edges, and cut a few slits in the top.  If that doesn’t appeal to you, then roll the dough into a square or rectangle and cut thin strips that are ½ inch in width.  Layer the strips to give a weaving look.  This is the way I went with the top crust.

Lastly, mix-up an egg wash to brush over the dough.  Beat one egg with about 3-4 tablespoons of water.  Brush this over the crust and sprinkle the remaining sugar mixture on top.

Apple Pie-Finish

Place in the oven for 50-60 minutes until apples are tender and crust is lightly browned.

Let pie set for 5-10 minutes, and then serve with vanilla ice cream.

Apples

Good Morning!  In my last post I mentioned that my husband and I went for a little day trip to Black Mountain and Old Fort, North Carolina.  We had a blast hiking and spending much needed quality time together.  The weather was absolutely perfect and I could not have asked for a better day except that maybe it could have lasted a little longer.  Hey, a girl can dream can’t she?!

Am I the only one who feels that the work week drags on and on and then the weekend flies by?  I have this theory that production might be a little higher if the work week was only four days and the weekend a mandatory three days.  I know! I know!  I’m dreaming again!  If only, right?!  The point is enjoy your weekend only if it is one or two days.

After my husband and I finished hiking in Old Fort we decided to drive to Hendersonville, North Carolina.  Oh yes…can anyone say APPLE COUNTRY?!!!  It was so pretty with apple orchard after apple orchard and the mountains in the background.  It was absolutely beautiful!  We stopped at one of the orchards called Grandad’s Apples.  We drove in surrounded by apples trees on one side and a fenced area on the other side with goats and a donkey.  In front, was a large barn.

We walked inside and the aroma of fresh baked apples filled the air.  Oh my goodness it smelled heavenly!  Inside the barn was a bakery, cider slush machines, jars of different jellies, jams, and oh yes apple butter along with many other items for sell.

We continued to the back of the barn where the barn was open to the outside and there sat rocking chairs for customers to enjoy their baked goodies.  But as soon as we reached this area of the barn my jaw dropped open and a sense of jealousy rushed through me.  If only I could enjoy this perfect view every day!  The view was gorgeous and relaxing!  There were apple trees upon apples trees on one side and on the other side a huge corn maze and a playground for kids.

There were picnic tables between the barn and the apple trees in the back of the barn.  That is where my husband and I spent about 30 minutes just sitting there talking and enjoying the view…and of course enjoying our goodies which included an apple dumpling topped with ice cream and a cider slush.  It was so delicious!

This was the perfect ending to a perfect day!  Before we decided to head back home we picked up a bushel, yes I said a bushel of apples.  I wanted to make apple butter, but after experiencing the apple dumplings and the cider I had other ideas in mind for these apples.  What was I going to make with ALL of these apples?

Let’s just say my Labor Day Monday was filled with apples after apples and I stayed in the kitchen for the majority of the day.  It was really nice though because my Mom and Dad came by for an unexpected visit, so Mom helped me in the kitchen whipping up all kinds of wonderful apple dishes.  We made apple butter, apple dumplings, and my personal favorite apple pie.  I’m a sucker for fresh apple pie right out the oven!

APPLE BUTTER

Ingredients:

20-25 Apples, peeled cored and sliced

3 Tsp Raw Apple Cider Vinegar

¼ to ½ cups Water

1 ½ cup Brown Sugar

3 Tsp Cinnamon

¼ Tsp All Spice

¼ Tsp Nutmeg

2 Tsp Lemon Juice

10-12 Tbsp White Sugar

Directions:

Place apples in a crock pot.  Add all the other ingredients over the apples and stir.  Cook the apples on low for 6-8 hours until apples are tender and break apart when stirred.  You can add more sugar if that is your preference.  I used a mixture of Jonagold, Gold Delicious, and Fuji apples.  Jonagold and Gold Delicious are sweet-tart apples and Fuji apples are sweet.  This combination creates a good balance for apple butter where a lot of sugar is not required.

After I cooked the apple butter, I sterilized some jars in a hot boiling water bath.  I poured the mixture into the jars to the bottom neck of the jar and added back to the hot water bath.  I boiled for about 10-15 minutes.  I then took the jars out of the water bath, set on a counter, and listened to the pops of the lids while I worked.  Hearing the tops of the jars pop is like music to my ears.  It lets me know my job is complete.

Quality Time

After a long grueling week of work my husband and I decided to take a day trip this past Saturday.  It was spur of the moment, but was an awesome trip.  Every couple needs some quality time together and this was our time.  We decided we were going to North Carolina and wanted to go to the mountains, just wasn’t sure where.  We settled on Black Mountain, North Carolina.  It’s a quaint little town with several shops.  We decided to stop at the visitor’s center to see what trails were around there.  The guy working led us to Old Fort, NC where we hiked Catawba Falls Trail.

This trail was off the beaten path.  We had to take a side road down to the end of another road.  If the guy at the visitor’s center had not told us about it, we never would have known about it.  When we first walked up to the information area there were warning signs of bears and what to do.  Oh my!  Bears!  This could be good!  The signs mentioned walking in groups and if we saw claw marks or even spotted a bear we needed to start singing and making noise.  I really wanted to see a bear….well from a distance of course.

With that notice we started on our hike.  The hike did not start out well.  Let’s just say there were some rude people, a tense husband and wife, and some air that needed to be cleared between my husband and me.  After that, we were good to go.  The hike became very enjoyable and was exactly what the doctor ordered.  When I am out in nature it is so easy to see all of God’s beautiful creations.  I started snapping pictures of trees, leaves, rocks, and what we think was a tiny cave on the other side of the water.

After recalling the end to an enjoyable day I could not help but think there are so many times when we let our agenda cloud our ability to see things for what they are and see the beauty in it.  I personally have been at my wits end with my day job which is somehow turning into a day and night job.  Last week I only posted two blog posts because I was working late at night almost every day.  As much as I want my blog to take off, I still have to help provide for my family; however, this doesn’t mean I do not deserve a little play time too.

To be honest I have taken the entire weekend off from my day job.  I brought a stack of work home measuring about 8 inches high.  I haven’t even touched it yet on this Labor Day weekend.  I can honestly say I have enjoyed every minute of this weekend with my family.  Spending quality time with my husband is exactly what he and I needed to keep us going.  We have both been working crazy hours and with that comes exhaustion and stress and well…you know what that can cause!

Before my husband and I got married we loved to go hiking.  We hiked up until about two years after we got married from there life took over and we let everything else consume us.  With the adoption, my approach was we can’t spend any extra money which meant traveling was out.  Wrong!!!  We just needed to get back to the basics.  Moving forward my husband and I have decided that at least once a month or every two months we would take a day trip somewhere and just spend time together.  Making memories is what it’s about, not spending money or trying to work ourselves to death.  There comes a point when we have to step back and realize God gave us this life for a reason.  We can let work and everything else consume us or we can step back once in a while and let God open our eyes and be awed at His beauty and what he has created.  We all need that breathe of fresh air to help us realign our focus and priorities.
